For about 3 days I've been meaning to make some spring rolls...but could never get to the grocery store to get the wrappers...finally yesterday I made it! :)
Now, I will be the first to tell you that my spring rolls are not the cutest in the world - but they taste awesome!
So, I got the spring roll wrappers, rice noodles, avocados, cucumbers, cilantro and mock crab... My mister is allergic to shellfish so no shrimp! Then I made a dipping sauce of soy sauce, oyster sauce, hoisen sauce and a garlic ginger sauce all mixed together. It was so yummy!
Simply cook the rice noodles and drain. Then I made an assembly line of my other ingredients and close by had a bowl of hot water for dipping the wrappers in.
There is the before - the wrappers are hard...my daughter said, "They're like plastic plates!" Then you just dip them in hot water until they are pliable and stuff 'em!
They're not the prettiest things - but boy they were GOOD!
